So, who wins?

Quake III Conclusions:

The extra ram does not seem to help in Quake III Demo1. In fact the V6800 with 32MB DDR is the clear-cut Quake III performance leader. So less seems like more in this case J . Additionally, the Pentium III 800EB Mhz is faster (20-30 FPS) in the lower resolutions whilst utilizing the DDR ram equipped Geforce.

3D Mark 2000 Conclusion:

The V6800 just can't be beat here, however it was nice to see the 64MB texture test actually run for once. I haven't been able to get it to go with a 32MB card (regardless of AGP aperture settings.) The V6600 PRO 64MB did allow the test to go further, but it ultimately still lags behind the V6800 in performance.

Conclusion:

There is absolutely no reason why I would keep the Asus V6600 Pro 64MB if I had a choice between the two. The V6800 is faster in all of the benchmarks that matters to the average gamer. And while more RAM is generally good, it does not seem to usher in higher performance this time around. Having said all that, the V6600Pro is still a really fast card; it's simply just not as fast as its DDR toting brethren...
